Place the tuna on a hot grill and cook for about 2 to 3 minutes on each side for medium-rare

Place mushrooms on grill and cook until tender and juicy, about 2 minutes per side
Crack eggs, careful to maintain unbroken yolks, into pan and cook eggs until whites have set
Add onions and cook until golden brown and tender, about 10 minutes
Grill for 5 to 6 minutes on each side until just cooked through
In a large heavy skillet cook the onion, the ham, and the bell peppers in the oil over moderate heat, stirring, until the vegetables are softened, add the garlic, and cook the mixture, stirring, for 30 seconds
Add the tomatoes and cook the mixture, stirring, for 5 minutes, or until it is thickened
Add the garlic and cook until the slices begin to turn golden brown
Cover the casserole and close the grill cover and roast until the shrimp turn pink and are cooked through, about 6 to 7 minutes
Set aside while you cook the carrots
Add the carrots and cook, stirring occasionally, for 3 to 4 minutes or until beginning to soften
